Buying Guide: Lefse and Pastry Tools
Griddles and Rolling Pins
The Heritage griddle is a 16 in. cast aluminum grill with an overflow spout on its deep edge rim to control spills and splatter. Bethany's wood rolling pins come in a corrugated style for potato and hardanger lefse and a square cut style that is also popular for hardanger lefse. Pack flour into the grooves between each sheet of lefse, and many lefse cooks add rolling pin covers.
Pastry Cloths and Rosette Sets
The pastry cloth set includes a board with six non-slip legs and a screen printed heavy duck twill cloth that is machine washable. Bethany also offers a white cotton replacement cloth that measures 10 in., 12 in. and 14 in. rounds of dough. The rosette set has cast aluminum shapes that screw onto a wood handle and includes a rosette cookie recipe.
Turning Stick and Probe Control
The thin wood turning stick helps you transfer and flip lefse on the griddle. The metal and plastic probe control is a replacement part for griddles that have heating issues, and extended high-temperature use can lead to control failure. For long sessions, keep a second control on hand to swap in after about an hour, and have a qualified technician install electrical parts.
Frequently Asked Questions
What does Bethany make?
Bethany offers lefse griddles, wood rolling pins, lefse turning sticks, rosette cookie sets, cotton pastry cloths and a replacement probe control. Most items are for making Norwegian lefse, and the white replacement pastry cloth can also be used for rolling pie crust, cookies and pizza.
How do I choose the right size or part?
Check the dimensions in the product title, such as 10 in. long for the rolling pins or 19 in. for the pastry cloth set. For the probe control, match the part number on your old control, and measure before ordering a pastry cloth or griddle replacement.
What should I know about the probe control?
The probe control is recommended for grills that have heating issues, particularly during extended use. Follow the manufacturer's instructions and check your griddle manual before installing it, and avoid long high-temperature sessions on one control.
